Established in White Bear Lake, Minnesota, Rudy's Redeye Grill offers a taste of upscale-casual American cuisine. They've built a reputation for combining delicious food with a welcoming ambiance. Located in Downtown White Bear Lake, this restaurant boasts spacious indoor seating with a fireplace, a full bar, and during summer months, their popular rooftop patio becomes a favorite local destination. Whether you're seeking a casual lunch, a celebratory dinner, or a summer evening under the stars, Rudy's Redeye Grill offers something for everyone.

Meet Bill.

Bill Foussard purchased the White Bear Country Inn (previously known as Spinnakers Restaurant) in 2000. He gutted and remodeled the restaurant space to reflect the rich 130-year history of White Bear Lake, creating a space that would welcome young and old. Rudy’s opened in 2003, and the rooftop patio was added in 2011.

GENERAL MANAGER

Paula has been in the business since the age of 16.  She went to culinary school in the U.K. and at 19 years old she moved to Florida where she worked in various restaurants cooking, serving, bartending and then managing.  After 7 years spent in Florida, she moved to Minnesota and applied at Rudy’s.  She was a server for 3 months and was asked to become front of house manager.  She worked her way up to becoming the GM and has been with the establishment for 20 years now.  Paula says how she loves coming to work because of the team she created and the family it has become.

EXECUTIVE CHEF

Wade credits his mom Doreen for inspiring him as a child to the wonders of the kitchen, and designing a meal that will impress family and guests.  Wade took that passion and jumped in the restaurant industry at a young age of 15.  Growing up in Wayzata Mn, Wade started at a Mom and Pop Pizza Parlor, then moved on to Chi Chi's, Champs Americana and Minnetonka Yacht Club.  Having graduated from Michigan Tech he left the restaurant industry for a number of years to pursue a corporate career, but was drawn back in from a family friend and never looked back.  After working for Fairview Hospitals through the Pandemic, he decided it was time to get back into the Retail Restaurant Environment and has been with Rudy’s Red Eye Grill for 2 years.  Chef Wade brings his passion for food and Menu development to our Rudy's family, and likes to create dishes that wow our customers.  Chef Wade pulls from past job experiences,  adds fresh new food ideas, and strives to develop recipes that bring the flavor. Catering for large functions is one of his favorite parts of the job. He also enjoys loves the feedback from our guests, so pull him aside and say Hello.

April has been with Rudy’s Redeye Grill / White Bear Country Inn since 2000 but has been in the hospitality industry for 35 years.  She started her career working at the hotel front desk, moving quickly up the ladder to hotel assistant general manager and then director of sales.  Her passion for hospitality and leadership landed her a GM role at the age of 24.  Years later, as fate would have it, she was asked to join the sales and events management team and hasn’t looked back.  She prides herself on working closely with clients to bring their wedding, specialty event or meeting to fruition, which has been such a joy to her for the last 13 years.  April says that working for Rudy’s is so fulfilling…. The staff are like family and really care for each other and our loyal customers are always so happy.  There is no better reward than a smile on someone’s face and repeat business, that’s when you know you are doing something special!
