ALL BEEF SERVED IS USDA CHOICE ANGUS MEDALLIONS - Choice beef tenderloins (beef filets). The medallions are 4 ounces each. Guests can select 2 medallions (8 ounces) or 3 medallions (12 ounces). Plain is also available. Mushroom Bleu The medallions are charcoal grilled to desired temp. Then smothered with a wild mushroom blend (shitake, cremini, oyster, portabella) gorgonzola cream sauce. Blackened with Béarnaise The medallions are coated with Cajun seasoning then placed in a hot iron skillet and cooked to desired temp. Then topped with béarnaise sauce. (Béarnaise sauce is egg yolk, butter, lemon and tarragon.)
